A crockpot allows food ingredient such as grains, legumes and vegetables cook low and slow. Casseroles, soups and stews are some of the dishes that vegetarians eat to replace foods like beef, poultry, seafood and even pork. Vegetarians make delicious and nutritional meals by the use of crockpots that cook these foods slowly.
These slow cookers save time spent in the kitchen in the sense that you only need to select, gather and combine the ingredients and you are all set. A layered vegetable crockpot casserole for four to six people
What you need:
1) 2 cups of shredded cheese (you could use a 3-cheese blend of mozzarella, jack and cheddar)
2) 2 sliced large zucchini
3) 1 cup of frozen peas
4) 4 sliced russet potatoes
5) cup of frozen corn
6) 1 sliced carrot
7) 1/4 teaspoon of black pepper
8) Salt. About one teaspoon
9) 14.5 ounces of tomato sauce (salt less)
10) A tablespoon of Italian herb blend
You can now mix the carrots, peas, corn, salt, pepper, Italian herb blend and the tomato sauce. Use a non-stick spray to spray the inside of your crockpot and cover the bottom of the crockpot with several layers of potatoes. This process is aimed at making sure that you cover the bottom completely. You will then have to sprinkle with the pepper and salt.
Add a layer of the zucchini and the same way, sprinkle with the pepper and salt.
Add a 1/3 of tomato sauce and the vegetable mixture, and then cup of the shredded cheese on top.
Repeat the method two more times so that you end up with three layers.
Leave your food to cook for an average of 3-4 hours.
